Description
Pasteurized milk is a food widely consumed at regional level, in the municipality of Pasto there are companies that sell this product; by surveys of minority businesses located in communes eight eleven of this Municipality the Colácteos, Andean and Tapioka brands, such as increased consumption is recognized. These companies process and distribute pasteurized milk each with its respective supply chain, where for various reasons, mainly the breaking of the cold chain pasteurized milk may be altered in their chemical and microbiological factors affecting its life. an assessment of factors such as was done: temperature, pH, colony forming units and time throu-gh experimentation in the laboratory of microbiology at Mariana University, simulation software such as Excel and Matlab, and mathematical modeling to predict and understand the behavior the useful life of different temperature by the Arrhenius equation, which was obtained that the mark was more affected in less time is Andean, with the shortest lifespan with an activation energy of 581.73889 Kj / Mol Colácteos followed with an activation energy of 334.30594 kJ / mol and Tapioka with activation energy of 212.14834 kJ / mol. Finally it was concluded that the BAL growth depends directly on the temperature and for the samples exposed to temperatures 481(1)- Rev.
